The 2007 Premier Cru Brut Nature blends 50% Chardonnay with 25% each of Pinot Noir and Pinot Meunier, all fermented in oak. The intensely yellow-golden colored Sapience offers a deep, pure, fine, fresh and complex bouquet with very fine earthy and floral/herbal notes along with ripe apples, but everything is discreet and nothing dominant, just fine. Pure, lean and salty on the palate, this is a very elegant, highly delicate and perfectly balanced dry cuv?e that spent roughly eight years on the second lees before it was disgorged without the addition of sugar or sulfites. The wine has a nice creaminess but is pure and vital, has a good structure and finishes with stimulating grip and salinity. Marguets Sapience tastes more textured and creamy in a wine glass (Ren? Gabriel Gold or Zalto Universal), while the Lehmann Jamesse Prestige glass gives a more filigreed, finessed and elegant version. Tasted May 2018.
