The latest release of the NV Demi Sec Exquise is derived from the 2012, 2011 and 2010 vintages, and this bottle was disgorged in November 2018. Bursting with aromas of candied peel, dried fruits, amontillado sherry, peach and toasted nuts, it's full-bodied, layered and fleshy. Its 25 grams per liter dosage is largely imperceptible when paired with the right dish, and it by no means affects the sapid, umami-driven signatures that define Selosse's wines. Every time I drink this wine, I wonder if this is the closest we can get today to how 19th-century Champagne tasted?
