Bouchard's 2013 Rose de Saignee ”Le Creux d'Enfer” is pure Pinot Noir from three rows of a tiny, west-facing 0.032-hectare parcel planted on limestone in 1991. This was picked ”at a perfect level of ripeness and with not a single berry of botrytis,” says Cedric Bouchard, and the grapes were macerated for two days. The 2013 is pure and rich at the same time and is provided with delicate Pinot flavors. Intensely fruity yet fine on the palate, this rose reveals a great expression of Pinot Noir. Just 150 bottles were produced. Tasted at the domaine in April 2018.

セドリック・ブシャールは単一畑から、単一品種で、単一年のシャンパンを造る、コート・デ・バールに本拠地を置く、テロワールを表現する優れた造り手です。

野生酵母による発酵は数週間から数ヶ月にも及び、 単一畑 、単一品種、 単一年 のキュヴェしか造らない理由からアッサンブラージュは行いません。気圧は4.5程度と低く瓶詰めまで6－7か月間はステンレスタンクで寝かされます。瓶内熟成期間はほぼ3年間。

果実の純粋さとミネラル感と芳醇な香り。セドリック・ブシャールのシャンパンは官能性をまとっています。年産計1万5000本。ブルゴーニュやカリフォルニアのトップ生産者の多くが彼のファンです。
